Ingredients
- 1-2 cloves Garlic, finely chopped
- 1-2 Medium white onions, diced
- 600 g Mushrooms, quartered
- 200 g Pasta
- 250 ml Cream
- 50 g Any hard cheese , grated
- Salt
- Pepper
- 1 tsp Dried Oregano
Instructions
- Cook your pasta of choice according to package instructions. Reserve about half a cup of pasta water.
- In a large pan heat olive oil on medium heat and add garlic and onions. Saute until the onions become soft.
- Add the mushrooms and increase the heat to medium-high. Cook until all the water from mushrooms is evaporated.
- Reduce heat to medium-low and add salt and dried oregano.
- Add the reserved pasta water and cream. Let it come to a simmer then turn off the heat.
- Now add the pasta to the sauce and mix well. Serve with generously grated cheese and some good olive oil.
Notes
- For hard cheese consider Grana Padano, Pecorino Romano or Parmeggiano.
- Recommended pasta shapes: spaghetti, penne, rigatoni (or similar).
