Mushroom Cream Pasta

Ingredients
 

  • 1-2 cloves Garlic, finely chopped
  • 1-2 Medium white onions, diced
  • 600 g Mushrooms, quartered
  • 200 g Pasta
  • 250 ml Cream
  • 50 g Any hard cheese , grated
  • Salt
  • Pepper
  • 1 tsp Dried Oregano

Instructions

  • Cook your pasta of choice according to package instructions. Reserve about half a cup of pasta water.
  • In a large pan heat olive oil on medium heat and add garlic and onions. Saute until the onions become soft.
  • Add the mushrooms and increase the heat to medium-high. Cook until all the water from mushrooms is evaporated.
  • Reduce heat to medium-low and add salt and dried oregano.
  • Add the reserved pasta water and cream. Let it come to a simmer then turn off the heat.
  • Now add the pasta to the sauce and mix well. Serve with generously grated cheese and some good olive oil.

Notes

  • For hard cheese consider Grana Padano, Pecorino Romano or Parmeggiano.
  • Recommended pasta shapes: spaghetti, penne, rigatoni (or similar).
