Instructions
Cook your pasta of choice according to package instructions. Reserve about half a cup of pasta water.
In a large pan heat olive oil on medium heat and add garlic and onions. Saute until the onions become soft.
Add the mushrooms and increase the heat to medium-high. Cook until all the water from mushrooms is evaporated.
Reduce heat to medium-low and add salt and dried oregano.
Add the reserved pasta water and cream. Let it come to a simmer then turn off the heat.
Now add the pasta to the sauce and mix well. Serve with generously grated cheese and some good olive oil.
Notes
For hard cheese consider Grana Padano, Pecorino Romano or Parmeggiano.
Recommended pasta shapes: spaghetti, penne, rigatoni (or similar).
